April 19, 2024

Is there anything better than a stack of warm, fluffy pancakes on a Saturday morning? What about a stack of warm, fluffy pancakes made without gluten, dairy, or sugar? These paleo pancakes are guaranteed to start your day off right.

Why You’ll Love This Recipe

  • Gluten-Free: The protein gluten is found in items like wheat products, beer, and pasta. It may cause digestive symptoms in some people, including those with celiac disease. This recipe uses gluten-free alternatives to wheat flour to avoid bloating, cramps, and digestive discomfort often associated with eating gluten (1).
  • 5 Grams of MCTs: This recipe contains 5 grams of MCTs. MCTs have been shown to increase energy, curb appetite, clear brain fog, maintain blood sugar levels, support metabolism, and more (2, 3, 4).
  • No Additives: Most store-bought pancake mixes contain ingredients you may not recognize. The ingredient lists can include anything from saturated fats like palm oil to sweeteners like corn syrup solids and dextrose to additives and preservatives like modified food starch and lactic acid.

Here’s What You Need

  • Cassava Flour: To serve as a gluten-free alternative to traditional wheat flour as the base of the pancake.
  • NativePath French Vanilla Creamer: To add sweet vanilla flavor to the pancakes, plus an added boost of MCT and collagen.
  • Unsweetened Nut Milk: To add moisture without any gut-irritating dairy.
  • Pasture-Raised Eggs: To give the pancakes structure and add healthy fats and nutrients.
  • Pink Himalayan Salt: To bring out each flavor and add a healthy sprinkle of sodium.
  • Baking Powder: To give the pancakes their signature light and fluffy texture.
  • Grass-Fed Butter: To prevent the pancakes from sticking to the pan, give them their golden color and light crust, plus add delicious buttery flavor.
